Classic Cheese Soufflé

Ingredients

Base

  • 1 tablespoon Butter
  • 1 tablespoon All-purpose flour
  • 0.5 cup MilkWarm
  • 0.25 teaspoon Salt
  • Black pepperTo taste

Eggs and Cheese

  • 3 large EggsSeparated
  • 0.5 cup Grated cheese

Instructions

  1. 1.Preheat oven to 375°F. Butter the soufflé dish and lightly coat with flour.
  2. 2.In a saucepan, melt butter over medium heat. Whisk in flour and cook 1 minute.
  3. 3.Gradually whisk in warm milk and cook until thickened, about 2–3 minutes.
  4. 4.Remove from heat. Stir in salt, pepper, cheese, and egg yolks.
  5. 5.In a clean bowl, beat egg whites until stiff peaks form.
  6. 6.Gently fold one-third of the egg whites into the base, then carefully fold in the rest.
  7. 7.Pour into prepared dish and bake 25 minutes until puffed and golden.
  8. 8.Serve immediately — soufflés fall quickly.
