Ingredients
Base
- 1 tablespoon Butter
- 1 tablespoon All-purpose flour
- 0.5 cup Milk — Warm
- 0.25 teaspoon Salt
- Black pepper — To taste
Eggs and Cheese
- 3 large Eggs — Separated
- 0.5 cup Grated cheese
Instructions
- 1.Preheat oven to 375°F. Butter the soufflé dish and lightly coat with flour.
- 2.In a saucepan, melt butter over medium heat. Whisk in flour and cook 1 minute.
- 3.Gradually whisk in warm milk and cook until thickened, about 2–3 minutes.
- 4.Remove from heat. Stir in salt, pepper, cheese, and egg yolks.
- 5.In a clean bowl, beat egg whites until stiff peaks form.
- 6.Gently fold one-third of the egg whites into the base, then carefully fold in the rest.
- 7.Pour into prepared dish and bake 25 minutes until puffed and golden.
- 8.Serve immediately — soufflés fall quickly.
