Chicken & Vegetable Soup

Ingredients

Protein

  • 1 lb chicken breastboneless skinless, cut up

Soup Base

  • 6 cups chicken brothlow sodium
  • 2 garlic clovesminced
  • 1 teaspoon italian seasoning

Vegetables

  • 1 cup carrotssliced
  • 1 cup celerysliced
  • 1 cup oniondiced
  • 2 cups spinachfresh

Seasoning

  • saltto taste
  • black pepperto taste

Instructions

  1. 1.In a large pot sauté onion and garlic for 2–3 minutes until fragrant.
  2. 2.Add chicken broth, chicken breast, carrots, celery, and Italian seasoning.
  3. 3.Bring to a simmer and cook for about 20 minutes until the chicken is cooked through and vegetables are tender.
  4. 4.Stir in spinach and cook for another 2 minutes until wilted.
  5. 5.Season with salt and pepper to taste and serve hot.
